Organic spelt berries, an ancient relative of wheat with a light, nutty flavor. Cook whole for salads and soups, or grind for flour that swaps easily for wheat in most recipes.

How to cook: Simmer 1 cup spelt in 3 cups water or stock, covered, about 1 1/2 hours.

Good to know: Certified organic, grown in Canada. Contains gluten.
